Traditionally Taiwanese teas are steeped in small tea pots with 7 to 9 grams of tea (approx 3 teaspoons). The tea is strong and yet has a natural tea sweetness. Steep this tea for 30 seconds. You can usually steep the pot 6 times.
My preference is to use a larger Korean Tea pot which holds 6 oz of water with 3 teaspoons of tea (about 9 grams of tea). I increase the steeping times with each subsequent steeping. After 4 or 5 infusions don't be afraid to push it...steep your tea for 20 to 30 minutes or even overnight. You can always add some hot water to warm the tea or dilute it if its too strong. With quality teas you can always make more! Remember you create your ideal tea taste by he amount of tea you use, the temperature of the water and the length of time you steep the tea. Don't be afraid to experiment.
